Kadai Paneer


Kadai paneer is a super delicious and utterly simple dish. Its a classic side from the house of north Indian cooking. The essence of coriander and cumin brings life into paneer and vegetables to making it a vibrant entry on your table.

Ingredients


Paneer/cottage cheese (sliced): 1/3 cup
Onions (cubed): 1/3 cup
Bell peppers (sliced): 1/4 cup
Carrots (sliced): 1/4 cup
French Beans (cut): 1/4 cup
Mushrooms (sliced): 1/4 cup
Green Chilies (finely cut): 4-5
Ginger Garlic paste: 1 1/2 teaspoons
Tomato (chopped or pureed): 1
Turmeric Powder: 1 teaspoon
Chili Powder: 2 teaspoons
Coriander Powder: 4 teaspoons
Cumin/Jeera Powder: 2 teaspoons
Kasoori Methi (Crushed): 2 teaspoons
Lemon Juice: 1 teaspoon
Ghee
Salt to taste
Oil

Heat some oil in a kadai or a deep pan. Add green chilies, ginger garlic paste and saute well. Add onions and a pinch salt. When onions start to turn pink, add turmeric powder, chili powder, vegetables and saute well. Add the paneer and saute again. Make sure the paneer doesn't break. Now add the tomato puree and mix well. Let all the vegetables simmer in the tomato puree. Once the water content from vegetables and tomato puree has dried up, add coriander powder, jeera powder, kasoori methi and stir well. Don't allow the vegetables to get very tender. Squeeze some fresh lemon and mix well. Finally add a touch of ghee before serving.
